Prep time is significantly cut down by using a food processor. For the crust, use the food processor medium grating disc to grate the onions and potatoes, working in batches. For the filling, fit the metal blade onto food processor and drop garlic through feeding tube with the machine running. Turn the machine off and add the onion to the work bowl. Pulse until chopped. I recommend chopping the cauliflower by hand to get desired size.
