Slow Cooker Corned Beef and Cabbage
This Slow Cooker Corned Beef and Cabbage is incredibly simple and tastes just like St. Patrick’s Day should! Throw everything in your slow cooker and enjoy a Guinness while your house fills with the aroma of perfectly cooked corned beef.

- 1 large onion, halved and thickly sliced
- 3-4 pounds corned beef and included spice packet
- 1 12 oz beer (can sub broth of choice)
- 1 cup water
- 2 tbsp apple cider vinegar
- 2 tbsp sugar
- freshly ground pepper
- 3 carrots (or more), peeled and cut into large chunks
- ½ head (or more) cabbage, cut into wedges
Place the onion slices in the bottom of a 6-quart slow cooker. Rinse brisket and lay it on top of onions fat side up. Dissolve sugar in water and then pour all liquids over meat. Sprinkle brisket with included corned beef seasoning packet and finish with freshly cracked pepper. (You can do this step the night before if you wish.)
Cook on low for 4 hours. Flip meat and lay cabbage and carrots on top. Cook on low for 3 more hours. Let rest about 10 minutes before slicing against grain and serving.
You can add some potato chucks with the other veggies if you wish.
Don’t be afraid to throw everything (except for the cabbage and carrots) in the slow cooker the night before…that way all you have to do is plug it in.
