Orange, Cucumber and Avocado Salad with Orange Vinaigrette Dressing

This simple salad is easy, yummy and festive. It is great for a quick mid-week meal or perfect for a fancy dinner party. You can’t go wrong with this healthy yet packed with flavor salad.

Ingredients

Salad

  • spring mix or green of choice: hearts of romaine, spinach, iceberg, kale, etc.
  • 1 orange peeled and cut into bit size pieces (can use 2 clementines or mandarins)
  • 1 avocado pit removed and diced
  • ½ cucumber peeled and diced
  • ½ cup chopped walnuts
  • ½ cup crumbled goat or feta cheese
  • ¼ cup pomegranate seeds optional

Orange Vinaigrette Dressing

  • 5 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 2 tbsp Dijon Mustard can sub stone ground or whole grain
  • Juice of an orange or juice of 2 clementines or mandarins
  • salt and freshly cracked pepper to taste

Instructions

  • Place all the salad ingredients in a large bowl. Mix the dressing ingredients together well (I use a jar with a lid) Taste and adjust to your liking. Pour the dressing over the salad and toss gently. (I like a lightly dressed salad. If you feel yours is too dry, drizzle some extra virgin olive oil over it and toss.)
