Simple Slow Cooker Chicken Thighs

This easy slow cooked chicken dish is ready to get going in under five minutes and will give you fall-off-the-bone tender chicken with minimal effort. Just set it and forget it. Feel free to use different or more spices and vegetables. Enjoy!

Ingredients

  • 4 bone-in chicken thighs (or 6-8 drumsticks)
  • 1 medium onion, halved and sliced
  • 1 medium tomato, halved and sliced
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • salt and freshly ground pepper to taste

Instructions

  • Arrange the veggies on the bottom of the slow cooker. Season both sides of the chicken generously with spices. (I like to place chicken in the slow cooker, season and flip with tongs.) Arrange chicken skin side up in a single layer a top of the veggies. Cook for at least 4 hours on low. Chicken is ready when it is no longer pink inside and measures over 165 F with a meat thermometer. The longer you cook the chicken, the more tender it will be.
