If you like curry sauces, be kind to yourself and pick up Trader Joe’s Thai Green Curry Simmer Sauce. It’s delicious. While I have dabbled in making curry sauces, I often find that the ones available in stores these days are delicious and let’s be honest, even the most avid cooks don’t often have lemongrass on hand. What I love about a good premade curry sauce is that someone else did almost all the hard work for you, but you still get to dish out a homemade meal. These sauces can be used in an array of dishes. Today I share with you one I’ve been preparing since I discovered Trader Joe’s Thai Green Curry Simmer Sauce.
To brown or not to brown the chicken
I’ve done both. When I’m pressed for time or feeling super lazy, I skip the browning. This puts the chicken in the oven in under five minutes. The problem is, my husband always notices when I don’t brown the chicken. So, do yourself a favor, and if you have time, brown it. This will add both flavor and texture to the dish and it really only takes a few extra minutes. If you skip this step, the chicken will crisp up a bit in the oven, but not nearly as much as it does with the help of some butter!
Can I use something else besides thighs?
Probably! I’ve made this with drumsticks, but my preferred way is with thighs. If you try it a different way and you love it, let me know!

This meal is quick, tasty and satisfy. The sauce really is the star of the show and Trader Joe’s deserves most of the credit, but your secret is safe with me! Chicken Thighs with Trader Joe’s Thai Green Curry Simmer Sauce

Ingredients
- 1 tbsp of butter or olive oil (optional–you can skip this step)
- 4 chicken thighs (I use bone-in, skin on)
- 1 medium onion, halved and sliced
- 1 jar of Trader Joe’s Thai Green Curry Simmer Sauce
Instructions
- Preheat oven to 350 degrees. In a large skillet melt butter (or warm olive oil) over medium heat. Add the chicken thighs, skin side down and cook on medium to high until browned (about five to seven minutes). Note: You can skip this step if you’d like. It adds a bit more flavor and texture to the dish.
- Spread onions along the bottom of a large baking dish (I use an 8 X 11 glass Pyrex dish). Nest the chicken thighs skin-side up on over the onions. Cover with the whole jar of Trader Joe’s Thai Green Curry Simmer Sauce. Bake in preheated oven uncovered for 45 minutes or until chicken is no longer pink. I recommended removing the dish from the oven about halfway through the cooking time and spooning some of the sauce over each piece of chicken so that it doesn’t dry out. The sauce will get a bit watery as the onions release their juices, so I suggest serving this over rice.
