When blueberries are buy one get one free, I make this Easy Blueberry Cobbler. It is easy, quick, delicious, beautiful and a crowd pleaser. I’m not a huge baker, but this recipe checks the dessert box without being precise or fussy as I feel baking often is. Want to add more sugar? Go for it! Love butter? Use a whole stick! You really can’t mess this one up.
You can use your food process to beat the egg whites!
There are so many ways to beat egg whites, but since you’re going to use your food processor to make the crumble, you might as well use it to beat the egg whites too. Less cleaning! Hooray! While using your food processor won’t get you the same firm and stiffness as an eggbeater, for this recipe it really doesn’t matter. I’m all about efficiency in the kitchen and this little hack will become your new go-to. All you have to do is fix your work bowl with the metal blade, add egg whites and process until they are stiff and firm (they will stick to the wall of the bowl). Truth be told, I don’t even rinse the bowl between beating the egg whites and making the crumb topping. It’s just not necessary.
Adjust sugar and butter to your liking
I don’t have a super sweet tooth. In fact, I’m not a huge dessert fan since I personally prefer salty foods. However, this doesn’t mean that I don’t have some tubs of ice cream and Girl Scout Cookies for those days I just can’t go without dessert. The first time I made this recipe I used a cup and a half of sugar, and it was way too much for me. I’m more of a ¾ cup girl. But, as always, this is your recipe, so add more if you want! Same goes for the butter. Originally, I used a whole stick, but honestly you don’t need it. However, if you’re looking for a more decedent dessert, use the whole thing. This recipe isn’t fussy, so you can tailor it to your tastebuds.

Easy Blueberry Cobbler
Equipment
- Food processor
- Oven
Ingredients
- cooking spray of choice
Filling
- 2 egg whites
- 2 pints firm blueberries
Crumb topping
- 1 cup flour
- ¾ cup sugar (you can add up to a ½ cup more depending on your sweet tooth)
- 6 tbsp salted butter, very cold (preferably frozen), cut into 4 or 5 pieces
Instructions
- Preheat oven to 400 F. Grease an 8 X 11 Pyrex baking dish (or similar). Pour blueberries directly into greased pan. Beat the egg whites until they are stiff and firm (see note below if you would like to use your food processor to beat the egg whites). Fold egg whites gently and thoroughly into the blueberries. With metal blade in place, add all crumb topping ingredients to the work bowl of your food processor. Process until it is a fine crumble, about 25-30 seconds. Spread evenly over blueberries. Bake for 35-40 minutes (blueberries should be bubbling) in a preheated oven. Broil on high for 3-4 minutes, until crumb topping is golden brown, keeping a close eye so that it doesn’t burn. Allow to cool slightly before serving.
