Being a sneaky mom is the best. So, if you’re looking for a delicious, fun and easy way to get some fruits, veggies and added protein into your little ones, these Hulk Pancakes are perfect. They truly taste just like regular pancakes but have a boost of fruit (a banana) and veggies (spinach) and protein (milk, egg and Greek yogurt). If a kid sleeps over at my house, you can bet that they will be breakfasting these bad boys. I have been asked so often for the recipe, that I figured it was time to put it on the blog! I recommend making these on a griddle (affiliate link) if you have a hungry family. My frying pan isn’t big enough to keep up:)
Green=superpower strength
My baby is a baby, so he doesn’t even know that he is eating green pancakes. If your kids scoff at these, let them know that they are green so that they can be strong like The Hulk! Sometimes you’ve got to sell the story. Like I said, I’ve served these to many different children, and after they hear about their potential superpower strength, they eat them up! I’ve even held a push up contest after breakfast and they are always able to do more than they ever could before! The power of the pancakes!!!
Don’t forget the toppings!
I love adding some banana slices or blueberries to these pancakes. My nephews always request chocolate chips since they know I’ll always say yes! Treat these like you would any other pancake and top with whatever you love. Of course, don’t forget to slather them in maple syrup—the real stuff only please;)

Hulk (Spinach) Pancakes
Equipment
- Blender or food processor
Ingredients
- 1 large egg
- 1 banana (broken in half)
- 1 ½ cup tightly packed baby spinach (about 3 large handfuls)
- 1 cup milk (low fat ok)
- ¼ cup plain Greek yogurt (low fat ok)
- 1 tsp baking powder
- ½ tsp baking soda
- pinch of salt
- 1 cup flour
- butter (can sub oil or cooking spray)
- optional toppings: banana, blueberries, strawberries, chocolate chips, etc.
Instructions
- Add all ingredients except flour, butter and toppings to your blender or food processor. Process until smooth. Add flour and pulse a few times until completely incorporated (do not over process). Warm and grease a griddle or a large nonstick pan over medium heat. Pour small rounds of batter, making as many pancakes as will fit. Add optional toppings and let cook until bubbles start to form (about 2-3 minutes). Flip and cook other side until set (about 1-2 minutes). Regrease and continue to prepare pancakes. You can keep the finished pancakes warm in the oven (250 degrees F).
