It’s that one time of year when the meat section is overflowing with corned beef and the Guinness is on sale. Fun fact: they don’t eat corned beef in Ireland! I know…I’m shocked every time I think about it! Don’t let the un-irishness of corned beef stop you from serving it on St. Paddy’s Day. It’s a tradition in my house! Plus, most people don’t even know it isn’t Irish. If you’ve never made it, you’ll be surprised how incredibly easy it is. In fact, some genius decided to include a spice packet with the beef brisket to really make things fool proof. How thoughtful of them! Honestly making corned beef is a breeze because like most slow cooker meals, all you need to do is throw everything in the slow cooker and hit start! You’ll be rewarded with a tasty meal with minimal effort. The best part is you can avoid the kitchen and truly enjoy the St. Paddy’s Day festivities. Now that my friends, is how I like to party!
Can I get this ready the night before?
Of course! One of the things I love most about using my slow cooker, is prepping everything the night before and then just pulling her in right before I leave for work. This recipe is a bit trickier though because you’ll want to add the veggies and lower the heat after four hours. You don’t want your cabbage and carrots to be complete mush! For me, I have my hubby start the process at noon that way I can add the veggies and turn down the heat when I get home.

St. Patrick’s Day has always been one of my all-time favorite celebrations and let’s be honest—it just isn’t St. Patrick’s Day without some Corned Beef. Slow Cooker Corned Beef and Cabbage
Equipment
- Slow cooker
Ingredients
- 1 large onion, halved and thickly sliced
- 3-4 pounds corned beef and included spice packet
- 1 12 oz beer (can sub broth of choice)
- 1 cup water
- 2 tbsp apple cider vinegar
- 2 tbsp sugar
- freshly ground pepper
- 3 carrots (or more), peeled and cut into large chunks
- ½ head (or more) cabbage, cut into wedges
Instructions
- Place the onion slices in the bottom of a 6-quart slow cooker. Rinse brisket and lay it on top of onions fat side up. Dissolve sugar in water and then pour all liquids over meat. Sprinkle brisket with included corned beef seasoning packet and finish with freshly cracked pepper. (You can do this step the night before if you wish.)
- Cook on low for 4 hours. Flip meat and lay cabbage and carrots on top. Cook on low for 3 more hours. Let rest about 10 minutes before slicing against grain and serving.
