I love salads, but sometimes I want one that isn’t lettuce-based. This Simple Shredded Cabbage Salad is one of my go-tos on such occasions. It is both healthy and refreshing. It comes together in a flash especially if you use a food processor to prep the veggies. You could even serve it as an alternative to traditional coleslaw. It goes great with burgers (I have a few veggie burger recipes on the blog including a mushroom chickpea version, a black bean variety and a quinoa based one). No matter how you serve it, I hope you love it.
Food processor magic
Sure you can shred and dice the veggies by hand, but if you have a food processor, this is a great recipe to bust it out for! I use the 1 mm slicing disc to shred the cabbage. Then I use the blade to chop the garlic, onion and cilantro. It honestly takes less than a minute!

Simple Shredded Cabbage Coleslaw Salad
Ingredients
- ½ head red or green cabbage, thinly sliced (I use a 1mm disc; see note below)
- ½ diced red onion, diced (can sub white onion or shallot)
- 1 garlic clove, minced
- 1 tbsp vegetable oil
- handful of cilantro, chopped
- juice of 3-4 limes
- ½ tsp chili powder
- ¼ tsp sugar
- dash cayenne pepper (optional)
- salt and freshly ground pepper to taste
Instructions
- Combine all ingredients in a large bowl. Toss well, serve and enjoy.
